Sibel Özilgen - Hikayeleriyle Türk Mutfağı

This book, which is the product of a project initiated in 2015 at Yeditepe University Gastronomy and Culinary Arts Department in order to discover the richness of our culinary culture and transfer it to the younger generations, tells the culinary stories of fifteen cities from different regions of Turkey. With the effect of rapidly developing industry and technology, changing consumption tools, increasing urbanization, migration and globalization, traditional culinary cultures that are being forgotten and changing day by day all over the world can only be kept alive if they are recorded in writing and transferred to young people. One of the main conditions of transferring the traditional to new generations is to adapt it to today's conditions by preserving the main texture of the existing one; This study is a step taken to record the Turkish culinary culture, which has begun to disappear, with its different aspects, and to bring it together with new generations.
